Our Custom Crush Services

Longhorn Cellars will provide the facility, equipment, expertise, and resources to assist aspiring winemakers in producing their own wine brands.  We are available to help with any or all of the following:

  • Grapes or Juice Sourcing:  Assist in locating the grapes or grape juice for the wine project.
  • Facilities and Equipment:  Fermentation tanks, barrel storage, and bottling lines.
  • Winemaking Expertise:  Assistance in making decisions related to techniques, fermentation, aging, and blending.  
  • Regulatory Compliance:  We ensure the final product meets all regulatory requirements.
  • Branding and Labeling:  We have resources to help with these design aspects.
  • Bottling and Packaging:  We handle the bottling and packaging process. 

Our Laboratory Testing Services

We have established a wine laboratory to assist winemakers.  We can help to maintain quality control, make informed decisions during the winemaking process, comply with regulatory requirements, and ultimately produce wines that meet consumer expectations.  

Here are some of the tests our trained staff can perform for you:

  • Chemical Analysis:  We test sugar content (Brix), yeast assimilable nitrogen (YAN), alcohol content, pH levels, acidity (total acidity, volatile acidity, and malic acid) along with free and total sulfur dioxide levels.
  • Sensory Evaluation:  Tasting to evaluate aroma, taste, color, and overall sensory profile.  
  • Quality Control Testing:  Various tests to ensure consistent quality from batch to batch.  
  • Fermentation Monitoring:  Track the progress of fermentation and make necessary adjustments to achieve desired outcomes.
  • Residual Sugar Analysis:  Testing after fermentation to understand sweetness levels and ensure fermentation completion.
